Table Tonic Breakfast

Familiar with Table Tonic?

If not, check it out. Louise has a killer blog, fabulous online store and an amazing home. A very bright, colorful, Australian lifestyle that makes me feel frumpy and dull. Reading Table Tonic makes me want to add some color to my life.

Or at least a salad to my day. Louise posted this amazing looking salad last week and I thought, hey, now that's something I can try without a huge commitment.

So off I ran to the store and gathered up all my ingredients for a yummy Aussie breakfast. Yes, it was supposed to be a breakfast salad, but as I am not that hip, I had it for lunch. It was tasty, except I forgot the stinking avocado and I am not convinced I like kale. Is it an acquired taste? Yesterday I picked up a bag of spinach (and the missing avocado) and I have to say it got two thumbs up.
Want to try it? Recipe here.
(I used olive oil instead of coconut oil)
Let me know what you think.
And what are your thoughts on kale?

  1. Wow, that looks way too healthy for me, but I should probably try it for my own good. I'm not sure I've ever tried kale. Maybe at some fancy restaurant where they slipped in while I was unaware.

  3. Can't wait to try this recipe. I love Kale and I especially love Kale chips (olive oil, lemon and garlic - dehydrated or baked).

  4. Kale can be an acquired taste, but nutritionally is well worth the effort. I like to sauté it with a tiny bit of bacon drippings and cayenne pepper, then eat it with white beans & cornbread. A good Southern meal!

  7. Hm- have I tried kale? Cyndia's way sounds good. You salad looks so pretty, Sissy. I might prefer it with spinach and definitely with the avocado.
